This plum citrus arugula spinach salad has become my new favorite summer salad and I hope it becomes yours too. It’s simple and satisfying, hits the sweet and zesty flavor notes, has a little crunch, and the citrus dressing is the cherry on top. What more could you ask for?! This one will be enjoyed by young and old.

The ripe summer plums and juicy oranges go well in this summer salad- but, I would absolutely eat this year round. Try pairing this plum citrus salad with a side of easy maple cinnamon skillet sweet potatoes and our raspberry hemp almond butter smoothie. My mouth is watering already.

It’s a simple, quick-to-make plum citrus salad that’s nourishing yet light, loaded with delicious toppings kids love (oranges and plums are my favorites). Ingredients

- Arugula/spinach mix
- Plums
- Oranges— we tested this recipe with Cara Cara oranges which turned out delicious- perfectly sweet. Feel free to try a different type!
- Pistachios
- Hemp seeds
- Goat cheese
- Farro— this grain complements the citrus, sweet plums, and the crunchy pistachios with its chewy nature- I LOVE it. Cook farro according to package instructions.
- Olive oil
- Apple cider vinegar
- Maple syrup
- Salt

Instructions

- Peel oranges, then slice one orange and the plums. Roughly chop the pistachios.

- Add the remaining orange, olive oil, apple cider vinegar, maple syrup, and salt to a blender and blend together till smooth.

- Assemble the salad by adding the greens to a large salad bowl, then cooked farro, hemp seeds, orange and plum slices, pistachios, and goat cheese.

- Top with citrus dressing and cracked pepper. Enjoy immediately!
Hint: Add more or less toppings according to your preference. I usually add more… more toppings = one happy salad. 🙂
Substitutions
- Farro – you could try quinoa, or another favorite cooked grain. I love farro in this salad for its chewy texture.
- Pistachios – almonds, walnuts, or pecans all seem like very worthy substitutes.
Storage
I recommend serving this salad immediately, as the greens begin to wilt due to the dressing when left for long.

Slice the plums and oranges thin, and makes sure to get each element in every bite. This salad is my new favorite- I hope it becomes yours too!

Ingredients
Method
- Begin by peeling both oranges. Then slice one orange, and both plums. Chop the pistachios.
- Add the dressing ingredients to a blender (the remaining orange, olive oil, apple cider vinegar, maple syrup, and salt) and blend till smooth.
- Toss the greens into a large salad bowl. Begin topping the salad with the cooked farro, hemp seeds, sliced oranges, and plums. Add the pistachios and goat cheese crumbles. Drizzle the citrus dressing over the salad and top with a bit of cracked pepper. Enjoy immediately!
